Greek Lamb

I met a man on my flight back from San Fran. He bought me a drink and we started chatting...said I was cooking dinner for my boyfriend and another couple on New Years and he gave me this FABULOUS and yet EASY recipe! Lamb and Greek yogurt sauce. Feeds four and is done in 30 minutes :)

INGREDIENTS:
- 2 racks of lamb (easy and cheap from Costco)
- Greek seasoning (apparently in comes in a yellow tube)
- 1 bag of fresh spinach
- Olive Oil
- 1 medium onion
- 4 cloves of garlic
- 1/2 cup Light and Lively probiotic light vanilla yogurt (comes in green cups...but any light vanilla probiotic yogurt will work).

PROCESS:
1. Apply Greek seasoning liberally to lamb racks. Cook at 425 for 22 minutes.
2. Sautee onion and garlic. Take off heat.
3. Add olive oil to pan and sautee a lot of spinach.
4. Throw onions and garlic back in and add basil.
5. Add yogurt and stir until reach ideal consistency.

Andrea's Grandma's Stuffing

So this isn't super helpful since the holidays are now over, BUT I finally got the secret recipe for my grandma's famous stuffing/dressing and had to share! So delicious! This one is for 2 large pans--feeds a lot of people.

Ingredients:
- 4 loaves bread
- 4 eggs
- 2-3 onions
- 1 bunch celery hearts
- 3 sticks butter
- 4 chicken bouillion cubes
- 4 cans chicken broth
- sage
- poultry seasoning

Process (super easy!):
1. Lay bread out to dry for 1-2 nights
2. Break bread into small pieces and mix with eggs
3. Melt butter in the skillet and saute onion, celery, and bouillon cubes. Mix together and add to the bread mixture.
4. Add sage and poultry seasoning to taste, then add broth for consistency.
5. Bake at 350 for 1 hour.
